I’ve always loved Taco Tuesdays. What’s not to like about a crunchy bite filled with all your favorite flavors at once? During the week, I love to assemble this quick dish between work-at-home teleconferences. If you keep certain ingredients on hand like fresh cabbage, shredded cheese, and that beef you browned last Sunday as part of your food prep for the week, this comes together in minutes.

In a future post, I’ll get more into how a few small habits a week means you can throw a lovely salad together. For example, I buy cilantro, basil and mint (or cut from my garden in summer) and put in a glass of water on the kitchen counter like a vase of flowers. They keep a long time this way, and you can instantly add pizzazz to any dish as a finishing (and nutritious) touch.
The reason this one came together so easily is that I had taco meat leftover from another night, but you could just as easily make this with tinned chicken or other dinner leftovers.
Start with a base of cabbage sliced thinly. In a separate bowl make the dressing, and don’t be too exact. I used gut-feel 2 mayonnaise, a tsp of heavy cream and bottled lime juice from the fridge to thin in out, and a few blops from your fave bottled sauce from the fridge door like sriracha, tabasco, or cholula. Taste and adjust to your liking.
Toss the cabbage with the dressing and meat. Sprinkle cheese on top with sliced avocado and cilantro from that cup on your countertop. The combination of “crunchy creamy” from the dressed cabbage, combined with the savory punch of the meat and sauce, ending with the creamy cold avocado, makes a satisfying meal that you can squeeze between meetings.
