There’s something so delightful about dredging foods in creamy dip. It instantly uplevels the dipped item into a satisfying blend of saucy richness with crunch. And instead of feeling guilty of all the calories, you can celebrate hitting your daily macros because you are counting proteins and healthy fats. I woke this morning to the delightful video from the New York Times with Sarah Jampel’s Lemony Whipped Feta with Charred Scallions, and felt inspired to try it with my own twist.

What if I donโt like Feta cheese?
If you don’t like Feta you could easily swap in Cotija, Romano, or any other flavorful cheese. This is also a great way to use up leftover veggies from a prior meal. Shown here with Classic Cauliflower crackers from Cali’Flour Foods.
Lemony Feta With Charred Veggies
Equipment
- Food Processor or blender
Ingredients
- 1 each lemon sliced
- 1 bunch scallions
- 1/4 cup grilled veggies from a prior meal optional
- 4 ounces cream cheese softened and at room temp
- 2 cups Feta cheese crumbled
- 1 tsp black pepper
- 1 tsp smoked paprika
- 1/3 cup olive oil
- 2 tbsp heavy cream
- 2 tbsp avocado oil or any high-temp oil
Instructions
- Slice lemon crosswise into wheel shapes. Trim ends from scallions and cut whole bunch in half.
- Drizzle avocado oil over lemons and scallions, and broil until very browned. Lemons may take longer so watch scallion progress closely and remove earlier if needed.
- Combine feta, cream cheese, cream, olive oil, and seasonings and process until very smooth.
- Add two lemon wheels and all but a few of the grilled onions and pulse until lightly combined with some chunks of scallion remaining.
